Chef's Recipe for Sicilian Pork Roast: This is the perfect spice rub for either bone-in or boneless pork loin. Place pork roast on clean roasting rack or on aluminum foil on grill. Roast at very low heat - 225 degrees or turn on only one grill burner at lowest possible setting. (On Grill rotate meat end to end every hour!) Pour the entire contents of spice package onto the roast sprinkling the seasoning directly onto the "fatty side' of the roast. (If you pour soy sauce over the roast the seasoning will stick better). Lance the roast through the seasoning to penetrate the layer of fat - usually about 1/2". Roast until internal temp is 15 degrees. Cover and rest. Serve with polenta, red sauce and tossed Italian Salad.
Storage Instructions: In the case that there are remaining spices leftover in your Colorado Spice pouch, please seal in a Ziploc-style bag and store in a dark, cool, dry place. Use within 6 months.
